I did exactly what you said using SPI with block-to-fixed DMA transfer and it worked beautifully! The memory savings of being able to transmit all of the data across a single pin at a much faster rate (because all of the data serialized to a single SIMO pin instead of across 8 separate I/O pins) is a solid double bonus!
